Chocolate Chia Pudding

I am pretty much a sucker for 2 things:  dessert-made-healthy & chocolate!  So when I found this recipe on glutenfreeschool.com I knew I had to try it!  I modified just a couple of things according to what I had and added Philosophie Cacao Magic to ramp up the nutritional value.  This pudding lasts about 4 days in the fridge and can be portioned out prior to refrigerating.  I was pleasantly surprised at how "pudding-like" this actually was!  You would never guess that this dessert is gluten AND dairy-free!  The chia seeds add a great little crunch and the chocolate flavor is enough to satisfy any sweet tooth.  Below is my version of the recipe, Enjoy!

1 cup unsweetened almond milk

1 .5 cups chocolate almond milk

1/2 cup chia seeds

3 Tablespoons coconut palm sugar

1/2 teaspoon GF vanilla extract (use the good stuff, no alcohol or artificial flavors)

2 Tablespoons Philosophie Cacao Magic superfood blend powder

Combine all of the ingredients and mix well.  Put in sealable container (I used a large mason jar) or portion out into separate dishes and put in the fridge for at least 4 hours (over night is better).
